Granola Squares

 

INGREDIENTS:

  • 1 ½ cups rolled oats
  • 1 ¼ cup rice crisp cereal
  • ½ cup pecans, finely chopped
  • ¼ cup dried cranberries
  • 2  Tbsp hemp or chia seeds
  • 1 tsp cinnamon
  • ¼ tsp sea salt
  • 1/2 cup brown rice syrup OR ¼ cup maple syrup & 2 Tbsp raw honey
  • ¼ cup peanut butter
  • 1 tsp vanilla extract

Optional: ⅓ cup almonds // ⅓ cup coconut shreds, finely chopped

*Brown rice syrup is recommended for bars (better for binding). Syrup & honey is recommended for crumbled granola (topping yogurt, smoothies, etc)

DIRECTIONS:

  1. In a large mixing bowl, combine oats, cereal, pecans, cranberries, hemp seeds, cinnamon, and salt (and any other optional ingredients).

  2. In a small saucepan, mix peanut butter, maple syrup, honey, and vanilla together over medium heat. Stir constantly until melted and evenly combined (about 2-4 min).

  3. Pour wet ingredients over the dry ingredients. Combine thoroughly (should be very sticky).

  4. Line a large baking sheet or pan with parchment paper. Pour the mixture onto the pan and form it into a square (wet fingers with water to prevent sticking). Press down and shape the mixture until even  (option to use a rolling pin to help).

  5. Put the baking sheet in the freezer and leave for 15 min or until hardened. Remove the sheet and cut granola into even squares (or crumble). Store in a sealed container in the refrigerator.
